What does Lion’s Mane taste like?
Some people say it tastes like seafood; some people say more like pork but what’s the real deal? The reason lion’s mane is so often compared to meat is because it is soft with a fine grain texture. Like all mushrooms, lion’s mane has a high volume of water which make it particularly juicy and tender when cooked. It is light and buttery, but also very absorbent which makes it ideal for brining and marinading, making it a great option for plant-based meat alternatives. Brine with seaweed, dill and sea salt and you’ve got a great seafood alternative or pair with beetroot, paprika and Worcestershire and you’ll taste something much closer to a steak. While they may look soft and fluffy, their culinary versatility is anything but.
How should I store fresh Lion’s Mane?
Mushrooms should be stored in your fridge to keep them fresh and prevent them from degradation (no one likes a sweaty mushroom!). Storage outside of the fridge allows mischievous bacteria and competing fungi to start chomping their way through your delicious mushrooms, which can in turn upset your own tummy.
