Sausage Roll

Ingredients:

  • 1 brown onion, sliced
  • 6 cloves garlic, minced
  • 2 teaspoons olive oil or butter
  • 500g mushrooms, chopped
  • 2 eggs (or flax egg for vegan version)
  • 6-8 sprigs thyme leaves, fresh
  • Zest of 1 lemon
  • 4-5 tbsp soy sauce
  • 1 cup raw cashew nuts, pulsed
  • breadcrumbs if the mixture is too loose
  • 2-3 tablespoons pecorino romano (or nutritional yeast for vegan version)
  • 2 puff pastry sheets
  • Dukkah or pink oyster mushroom salt (to top)

Instructions

  1. Finely dice mushrooms, brown onion, garlic and breadcrumbs. Add to a pan on medium heat with butter and soy sauce and cook down until golden.
  2. Once cooked mixture is cool, combine with egg (or nutrional yeast to make plant-based) and season with lemon zest and fresh thyme. Stir to combine.
  3. Lay out your puff pastry sheet and brush with egg wash (or plant based milk).
  4. Add your filling to the pastry and roll before brushing again with egg wash (or flax egg).
  5. Bake in the oven at 200 degrees for 20 to 25 minutes until golden.
  6. Serve fresh out the oven with our pink oyster salt and mushroom ketchup!
