Sausage Roll
Ingredients:
- 1 brown onion, sliced
- 6 cloves garlic, minced
- 2 teaspoons olive oil or butter
- 500g mushrooms, chopped
- 2 eggs (or flax egg for vegan version)
- 6-8 sprigs thyme leaves, fresh
- Zest of 1 lemon
- 4-5 tbsp soy sauce
- 1 cup raw cashew nuts, pulsed
- breadcrumbs if the mixture is too loose
- 2-3 tablespoons pecorino romano (or nutritional yeast for vegan version)
- 2 puff pastry sheets
- Dukkah or pink oyster mushroom salt (to top)

Instructions
- Finely dice mushrooms, brown onion, garlic and breadcrumbs. Add to a pan on medium heat with butter and soy sauce and cook down until golden.
- Once cooked mixture is cool, combine with egg (or nutrional yeast to make plant-based) and season with lemon zest and fresh thyme. Stir to combine.
- Lay out your puff pastry sheet and brush with egg wash (or plant based milk).
- Add your filling to the pastry and roll before brushing again with egg wash (or flax egg).
- Bake in the oven at 200 degrees for 20 to 25 minutes until golden.
- Serve fresh out the oven with our pink oyster salt and mushroom ketchup!
